Note:

Chopped = chopped or cut into ½ cm pieces

Spaghetti Aglio e Olio is also awesome if eaten on its own. However, in this case, I added prawns and broccoli for additional protein and fibre.

How to make Pasta aglio e olio with garlic and lemon zest prawns and broccoli


1. Bring a pot of water to a rolling boil. Add broccoli and cook for 1 minute. Remove broccoli and set aside. Use the water for preparing the pasta.

2. Cook the pasta according to package directions until al dente. This is from 6 to 9 minutes. Drain, rinse, and set aside and mix with some olive oil. Pasta water set aside for later use.

3. At the same time, heat 2 tsp olive oil and 2 cloves garlic and the parsley stems in a pan for 2 minutes or until the garlic is fragrant.

4. Add the marinated prawns.

5. Stir and sauté on a low to medium flame for 4 to 5 minutes or until prawns are fully cooked.

6. Remove from the flame and set aside.

7. When the pasta is ready, sieve these and set aside. If it is a bit dry, add some olive oil.

8. Add and heat another 10 tbsp olive oil and 8 cloves finely sliced garlic in the same pan.

8. Stir and cook on a medium flame for 10 minutes to toast the garlic.

9. When the oil begins to bubble, stir, and cook on a low flame until the garlic turns golden brown.

10. Then toss in the pasta and mix for 30 seconds. Add salt and pepper to taste.

11. Switch off the flame and transfer pasta to plates.

12. Add prawns and broccoli to pasta.

13. Add parsley and grated cheese. Squeeze some lemon juice to the dish and serve.

Pasta

400 g to 500 g spaghetti

10 tbsp olive oil for cooking

½ to 1 tbsp olive oil after sieving the pasta

8 cloves garlic finely sliced

¼ tbsp black pepper powder

6 tbsp chopped parsley

½ to 1 tbsp salt added to boiling pasta

Grated cheese – added prior to serving

A dash of salt added to tossed pasta

A dash of black pepper – added prior to serving

A dash of chilli flakes – added prior to serving

Lemon juice (optional) – squeezed just prior to serving


Broccoli

1 flowering head (200 g to 300 g) broccoli, broken down into bite size pieces


Garlic and lemon zest prawns

1 to 3 tbsp olive oil

4 cloves garlic – finely chopped

1 shallot finely chopped (optional)

Grated cheese – added prior to serving

Lemon – lemon zest and juice for marinating prawns. Balance of juice to squeeze prior to serving

½ tbsp Black pepper

A handful (3 tbsp) parsley – separate the stems from the leaves.

12 to 16 prawns peeled, deveined and cleaned, with tails intact.

½ to 1 tbsp salt

Grated cheese
