Pumpkin soup is well known for its nutritional value. It can be cooked with pork bones, pork ribs, or minced pork.

 

Notes

 

Tbsp = tablespoon

Chopped = chopped or cut into ½ cm pieces

Place the pork bones to boil in a pot of water for 2 to 5 minutes to remove any impurities. After boiling, remove the bones and run them in cold water, and set aside.

Do not stew the pumpkin cubes for too long because it will be too soft.

Cut the spring onions or cilantro into 1 cm pieces.

 

How to prepare pumpkin soup

 

  1. Boil pork bone. scooping off any foam that may rise to the surface
  2. Simmer for 2 minutes, removing impurities from the water.
  3. Remove the pork bone and set aside. Discard the water.
  4. Fill the pot with water and place the blanched pork bones.
  5. Switch on high flame and bring to a rolling boil.
  6. The reduce to a medium flame and simmer for 15 to 20 minutes.
  7. While the pot is simmering, heat up 1 to 1½ tbsp oil in another pan.
  8. Then place shallots and garlic in the pan and fry until golden brown.
  9. Transfer the shallots and garlic to the boiling pot.
  10. Add the diced pumpkin to the pot. Simmer on a low to medium flame for an additional 20 minutes, or until the pumpkin is soft and the pork is tender. Add and stir in the soup stock, salt, sugar, black pepper, and fish sauce.
  11. Add spring onions or cilantro and switch off the flame.
  12. Squeeze some lime and serve hot

Ingredients

 

2 shallots

3 cloves Garlic

1 to 1½ tbsp Cooking oil

¼ tbsp Black pepper

Pumpkin diced into 3 cm cubes. Discard the skin and set aside the seeds. Seeds can be used in other dishes.

200 g Pork bones or pork riblets, or boneless pork ribs. Alternatively, may use chicken in place of pork.

Soup stock (optional)

½ tbsp Salt

½ tbsp Sugar

2 stalks spring onions cut into 1 cm pieces.

1 stalk Cilantro cut intov1 cm pieces (optional)

Water enough to fill the pork and pumpkins

1 tbsp Fish sauce
