A quick and easy recipe

This is a quick and easy way to cook quinoa. You can substitute tomatoes and peas with other vegetables. I used Baba’s meat curry powder in this recipe. Alternatively, you can create your own spice mix.

Rinse the quinoa well rinsed before cooking it to remove the outer coating, called saponin, which can leave a bitter taste. You do the same for some brands which label them as pre-washed. But it is better for you to do it again at home just to make sure the saponin is fully washed away.

Quinoa seeds are cooked in the same way as rice, and have a sweet, nutty flavour and texture. When they are cooked, they appear translucent with the germ ring visible along the outer edge of the grain.

 

Notes

Tbsp = tablespoon.

Chopped = chopped or cut into ½ cm pieces.

Cut the garlic into thin pieces.

Finely chop the ginger.

 

How to cook quinoa with curry spices

1. Rinse the quinoa and soak for 10 minutes. Drain and set aside. Prepare the other ingredients while the quinoa is being soaked.

2. Heat 1 tbsp oil in a pan.

3. Then add the cut garlic and finely chopped ginger.

4. Sauté on a medium to high flame for 2 minutes or until aromatic.

5. You can then add the quinoa and water.

6. Simmer the quinoa and water on a medium to high flame for 2 to 3 minutes.

7. Then add the tomatoes, peas, curry powder and salt. To up water if required.

8. Stir and simmer on a low to medium flame for 2 minutes or until vegetables are cooked. The quinoa should also be cooked by now.

9. Switch off the flame and let the quinoa rest for 1 to 2 minutes. The quinoa will continue to absorb the excess water. Serve hot or warm.

¼ cup quinoa.

1 tbsp cooking oil.

½ tbsp salt.

2 garlic cloves finely sliced.

½ tbsp ginger.

1 tomato cut into quarters.

50 g peas.

½ to ½ cup water.

1 tbsp curry powder. (I used Baba’s meat curry powder).
