This is a chicken dish that is fairly easy to prepare and cook, and is full of colour and flavour.


Note:

Tbsp = Tablespoon.

Tsp = teaspoon.

Chopped = chopped or cut into ½ cm pieces.

Turmeric = Turmeric is a yellow spice usually used in stir fries, stews and curries. Consuming turmeric brings a lot of health benefits.


INGREDIENTS:


Marinade ingredients:

½ tsp cracked black pepper or pepper powder.

½ tsp salt.

½ tsp turmeric powder.


Stir fry ingredients:

2 tbsp cooking oil.

300 to 350 g chicken breast, cut into small cubes or 2.5 cm pieces.

200 to 300 g long beans cut into 5 cm lengths.

2 shallots, finely chopped.

2 to 4 garlic cloves finely chopped.

1 white onion, sliced.

½ tsp sugar, to taste.

1 red chilli, unseeded and sliced into 4 pieces. This is optional.


METHOD:


1. Marinate chicken with salt, pepper and turmeric powder for 10 minutes.
2. Heat 2 tbsp oil and fry the shallots for 1 minute.

3. Then add the garlic and dry for 1 minute or until fragrant.

4. Add the marinated chicken and white onion and fry for 5 minutes or until partially cooked. Stir and mix the chicken and onion with the shallots and garlic.

5. The add the long beans and chilli (optional) and mix and fry them with the other ingredients for another 2 minutes until fully cooked. Add sugar to taste.

8. Switch off the flame and serve hot.

Cook Time: 10 mins

Total Time: 30 mins


Serves: 4 with rice.
