Pork stewed in soya sauce (Tau Yew Bak in Hokkien) with eggs and Tau pok is a savoury dish and has an intensely flavourful and complex taste.

And fortunately, it is quite easy to make, and cane be cooked in a few steps.


Note:

Tbsp = Tablespoon.

Tsp = teaspoon.

Chopped = chopped or cut into ½ cm pieces.

Soya Sauce = ordinary all purpose or light soy sauce. Do not use dark soy sauce.

Thick Caramel Sauce = This thick caramel sauce is soya based and is not too sweet. It is often used for meat-based stir-fries, Asian stews and rice or noodle dishes.

Tau Pok = Fried Bean curd Puffs (豆卜).


INGREDIENTS:


Marinade ingredients:

3 tbsp soy sauce, all purpose or light.

1 tbsp oyster sauce

½ tsp white pepper powder.

½ tsp salt.


Stewing ingredients:

2 tbsp cooking oil.

400 g pork shoulder or pork belly with skin and fat, cut into 2.5 cm pieces.

4 to 5 hard-boiled eggs.

1 pack (around 300 g) of Tau Pok cubes, cut in halves.

4 to 6 shallots, finely chopped.

1 bulb garlic. Crush the garlic and remove the skin from the cloves.

4 anise seeds.

3 to 4 cups hot water. Add more to cover all the ingredients if required.

2 to 3 tbsp thick caramel sauce, to taste.

A dash of salt, to taste.


METHOD:


1. Prepare 4 to 5 hard-boiled eggs, remove the shells and set them aside.

2. Marinate pork with soya sauce, oyster sauce, salt and pepper for 15 to 20 minutes. Place it in the refrigerator.
3. Heat the cooking oil in a saucepan.

4. Fry the shallots for 1 minute or until fragrant.

5. Add the marinated pork, garlic cloves and anise seeds and fry for 5 to 7 minutes.

6. Then add the water the eggs and tau pok. Add the caramel sauce to the stew.

7. Cover the saucepan and allow to cook and simmer for 10 to 20 minutes. Add salt to taste if required. The longer the stewing the better.

8. Switch off the flame and serve hot.
