Recipe inspired by bruschetta.

Bruschetta Chicken is like the traditional crusty bread version, but instead of bread, we use chicken marinated with salt, pepper and garlic and topped with onions, celery, capers, tomatoes, and parmesan cheese. This can be quickly prepared and paired with a pasta dish.

 

 

Note:

Tbsp = tablespoon.

Tsp = teaspoon.

Chopped = chopped or cut into ½ cm pieces.

Soffritto = a mixture of slowly cooked carrots, onions, and celery, used as a base to add flavour to sauces, soups and stews. The vegetables are chopped into small cubes or pieces and cooked in olive oil over a low heat until soft and just shy of brown or golden.

 

 

INGREDIENTS:

 

Main:

400 to 500 g chicken breasts, cut into 2 cm or bite sized pieces.

2 tbsp capers.

1 white onion or red onion, finely chopped.

1 stick celery, finely chopped.

2 tbsp Extra Virgin Olive Oil (EVOO).

2 to 3 tbsp olive oil, for brushing the baking pan and chicken.

1 packet (200 to 300 g) diced tomatoes.

15 g grated parmesan (cheese).

 A bunch of basil leaves.

 

 

Marinate:

2 – 3 cloves garlic, finely chopped.

½ tbsp salt.

½ tbsp cracked black pepper.

 

 

METHOD:

 
  1. Marinate the chicken with salt and pepper and keep in the refrigerator for 10 to 15 minutes.
  2. Add the chopped onion, and celery to prepare the soffritto. Sauté the ingredients for 3 minutes or until it is translucent and fragrant.
  3. Add the capers and stir and mix for 1 minute.
  4. Switch of the flame.
  5. Brush the baking pan with oil to prevent the chicken from sticking to the pan. And then place the chicken pieces onto the pan and brush with a bit of oil.
  6. Place the cooked onion, celery and capers on top of the chicken.
  7. Pour and coat the diced tomatoes on the top of the mix.
  8. Apply grated parmesan on the top of the mix or grate the parmesan directly, to cover all of the chicken.
  9. Bake or roast in the oven for 15 minutes.
  10. Serve hot with basil leaves (optional).

 

Prep Time: 20 mins.

Cook Time: 15 mins.

Total Time: 35 mins.

 

Serves: 4 with pasta.
