How to prepare mushroom soup
1. Heat up 1 tbsp oil and ½ tbsp sesame oil in a pot.
2. Then place shallots and garlic and spring onion whites and fry until fragrant.
3. Add the mushrooms and other ingredients and sauté for 2 to 3 minutes.
6. Fill the pot with water. Switch on high flame and bring to a rolling boil.
7. Boiling for 1 to 2 minutes.
8. Then reduce to a medium flame and simmer for 10 to 15 minutes.
9. Add and stir in the salt, black pepper, spring onion greens, cilantro, and soy sauce (optional) and switch off the flame.
10. Serve hot or warm.

Ingredients
2 stalks spring onions, green and white sections separated and cut into 2 cm pieces. These will be used separately.
2 to 3 shallots
2 to 3 cloves garlic
1 tbsp Cooking oil
½ tbsp sesame oil
¼ tbsp Black pepper
1 stalk Cilantro cut into ½ cm pieces (optional)
200g Shiitake mushrooms – raw
10 pieces Shiitake mushrooms – dry
200g Oyster mushrooms
200g Shimeji mushrooms
Any other mushrooms
1 stalk celery finely chopped.
1 tbsp Soy sauce (optional)
½ tbsp Salt
Water enough to fill the ingredients
