Delicious and easy to make

This Italian omelette is known as a frittata and is a classic. It is made with eggs, parmesan, and parsley only. You can also use this as a base recipe then add other ingredients such as mushrooms, tomatoes, zucchini, potatoes, and spinach. It can be served as a side dish or can be eaten by itself.

How to make a Frittata
- Wash and chop the parsley and put it to one side.
- Crack 4 eggs into a mixing bowl.
- Beat the eggs well with a spoon or fork.
- Once the eggs are mixed well, add a pinch of salt, and add the parsley into the bowl.
- Mix the ingredients for the frittata well and then add the grated parmesan cheese and continue mixing through.
- Then, heat up a few tablespoons of olive oil in a medium size saucepan on the stove.
- Once the oil is heated up, quickly pour the frittata mixture into the pan leaving it for about 10 seconds for it to cook.
- Then, using a fork, bring in the edges of the frittata, so you start to cook it from the outside in. This will help to dry up the egg, and make sure it does not stick. This also helps to give it a nice round shape.
- Follow this process until most of the egg is no longer a liquid, then remove the frying pan from the stove, get a flat round plate, place it on top of the frying pan and flip it on to the plate.
- Then, quickly put the frying pan back on the stove, and slide the frittata back on to it. The part which was previously been cooked is now facing up.
- Leave this to cook for at least 2 minutes before turning it another 2 times. You will know it is cooked through when it starts to brown.

3 to 4 tbsp of grated parmesan cheese
