Ginger wine chicken (姜酒鸡) is a healthy and wholesome dish. It is packed with a lot of flavours due to the combination of rice wine, ginger and garlic.

 

Note:

Tbsp = Tablespoon.

Tsp = teaspoon.

Chopped = chopped or cut into ½ cm pieces.

Soya Sauce = ordinary all purpose or light soy sauce. Do not use dark soy sauce.

Shao xing wine or Shao xing wine = Also called Shao xing hua tiao jiu (绍兴花彫酒), is a type of Chinese rice wine that hails from Shaoxing, a city in China’s Zhejiang Province. It is a key ingredient in many Chinese dishes.

Seasoning wine or Liao jiu = Liao Jiu 料酒 is a type of flavoured cooking wine. It has a milder flavour and the aroma is not as strong Shao xing wine and it enhances the flavour of meat and seafood.

Goji berries = Gou qi zi (枸杞子) also known as wolfberries, are tiny red fruits known for their sweet, slightly sour flavour and vibrant red hue.

 

INGREDIENTS:

 

Marinade ingredients:

2 tbsp soy sauce, all purpose or light.

1 tbsp Shao xing wine (Chinese cooking wine).

½ tsp white pepper powder.

½ tsp salt.

 

Stir fry ingredients:

1 tbsp cooking oil.

1 to 2 tbsp sesame oil.

300 to 350 g chicken breast, cut into 2.5 cm pieces or bite size pieces.

2 pieces of ginger, 3 cm by 1 cm, finely shredded.

4 to 6 garlic cloves finely chopped.

100 g Wood ear mushrooms, soak for 20 mins or until soften prior to cooking.

300 g Shiitake mushrooms, sliced into 25 mm pieces.

50 g goji berries.

1 cup hot water.

¼ cup seasoning wine (Liang Jiu).

4 pieces of rock sugar, to taste.

10 – 20 g Goji berries, gou qi zi (枸杞子).

 

METHOD:

 

1. Soak wood ear fungus in water for 20 minutes or until they soften. Drain and cut into bite size pieces.

2. Marinate chicken with soya sauce, Shao xing wine and pepper for 10 – 15 minutes.
3. Heat 1 tbsp oil and 1 tbsp sesame oil in a deep saucepan, fry the ginger and garlic for 1 minute or until fragrant.

4. Add the black ear wood fungus and marinated chicken and fry for 5 to 7 minutes or until cooked.

5. Pour in the seasoning wine and hot water, and add the rock sugar.

6. Cover the saucepan and allow to cook and simmer for 3 to 5 minutes. Add salt to taste.

7. Finally, add goji berries and simmer for 1 minute.

8. Switch off the flame and serve hot.
