I thought of this dish while searching for mushroom pasta recipes. At the same time, I wanted to add some vegetables to the dish and decide to use broccoli as the companion ingredient to the mushrooms.
Note:
Tsp = tablespoon
Chopped = chopped or cut into ½ cm pieces
How to make a light broccoli and mushroom linguine
1. Cook linguine according to package directions until al dente. This is from 6 to 9 minutes. Drain, rinse, and set aside. Pasta water set aside for later use.
2. Heat 1½ tsp oil in a pan. Add finely chopped shallots, garlic, ginger, rosemary and black pepper.
3. Stir and sauté on a low flame for 2 minutes.
4. Then add the chopped mushrooms.
5. Stir and sauté on a low flame for 6 minutes.
6. Then add the broccoli.
5. Stir and Sauté for about 1 to 2 minutes.
9. Then add ¼ to ½ cup of pasta water or mushroom stock.
7. Stir and sauté on a low to medium flame for 5 minutes.
13. Add salt and parsley and stir well.
14. Stir and sauté on a low to medium flame for 1 minute.
15. Add the linguine to the pan and stir to combine with the broccoli and mushrooms.
16. Stir and sauté on a low to medium flame for 2 minutes.
17. Switch of the flame and transfer the dish to plates.
18. Add a half tsp olive oil and squeeze some lime to the dish and mix. Add grated cheese and serve.

Ingredients
250 g linguine
1½ tablespoon cooking oil
2 – 3 medium size shallots finely chopped
6 cloves garlic finely chopped
¼ tablespoon finely chopped ginger
¼ tablespoon black pepper powder
½ tablespoon rosemary
¼ to ½ cup water or mushroom stock – to adjust as required
200 g shiitake mushrooms (or any other type of mushrooms) sliced into pieces with a 3 mm thickness
1 flowering head (200 g to 300 g) broccoli, broken down into bite size pieces
4 to 6 tablespoons chopped parsley
½ tablespoon salt added to boiling pasta
½ to 1 tablespoon salt for cooking – to adjust as required
1 to 3 tablespoon olive oil – added prior to serving
One lime for lime juice – squeezed just prior to serving
Grated cheese – added prior to serving
