Oyster mushrooms are a type of edible fungi. They get their name from their oyster-shaped cap and short stem.
The chicken can be substituted with pork or any other protein of your choice.

Ingredients
Main ingredients:
400 g oyster mushroom cut into bite sized pieces
300 g chicken breasts cut into ½ cm pieces
4 shallots, chopped into small pieces
4 cloves garlic chopped into small pieces
1½ tbsp vegetable oil
2 tbsp water
Seasonings:
½ tbsp ground white pepper
2 tbsp light soy sauce
A pinch of salt
Method
Preparing the ingredients before frying
- Slice and cut the chicken into ½ cm pieces. Add and mix chicken with 2 tbsp of light soy sauce and white pepper. Leave it to marinate for 15 minutes.
- Rinse and chop the oyster mushrooms into bite size pieces.
- Chop the shallots and garlic.
Frying the chicken
- Heat up ½ tbsp oil in the pan on a medium flame.
- Sauté the marinated chicken for 5 minutes or until cooked. Remove the chicken to a plate.
Frying the mushrooms
- Reheat pan with oil and set at high flame.
- Throw in the shallots and garlic.
- Fry for 2 minutes or until golden.
- Add in the mushrooms.
- Fry for 2 minutes or until the mushrooms are cooked.
- Add 2 tbsp water so that the mushrooms will not be too dry.
- Fry the mushrooms for another 3 minutes and add salt.
- After that, add in the cooked chicken and stir and mix well for one minute.
- Switch off the flame, throw in another dash of pepper and serve hot.

Cook Time: 15 mins.
Total Time: 35 mins.
