Oyster mushrooms are a type of edible fungi. They get their name from their oyster-shaped cap and short stem.

The chicken can be substituted with pork or any other protein of your choice.

Ingredients

 

Main ingredients:

 

400 g oyster mushroom cut into bite sized pieces

300 g chicken breasts cut into ½ cm pieces

4 shallots, chopped into small pieces

4 cloves garlic chopped into small pieces

1½ tbsp vegetable oil

2 tbsp water

 

Seasonings:

½ tbsp ground white pepper

2 tbsp light soy sauce

A pinch of salt

 

Method

 

Preparing the ingredients before frying

 

  1. Slice and cut the chicken into ½ cm pieces. Add and mix chicken with 2 tbsp of light soy sauce and white pepper. Leave it to marinate for 15 minutes.
  2. Rinse and chop the oyster mushrooms into bite size pieces.
  3. Chop the shallots and garlic.

 

Frying the chicken

 

  1. Heat up ½ tbsp oil in the pan on a medium flame.
  2. Sauté the marinated chicken for 5 minutes or until cooked. Remove the chicken to a plate.

 

Frying the mushrooms

 

  1. Reheat pan with oil and set at high flame.
  2. Throw in the shallots and garlic.
  3. Fry for 2 minutes or until golden.
  4. Add in the mushrooms.
  5. Fry for 2 minutes or until the mushrooms are cooked.
  6. Add 2 tbsp water so that the mushrooms will not be too dry.
  7. Fry the mushrooms for another 3 minutes and add salt.
  8. After that, add in the cooked chicken and stir and mix well for one minute.
  9. Switch off the flame, throw in another dash of pepper and serve hot.

Cook Time: 15 mins.

Total Time: 35 mins.
